Tokyo Bekana, Brassica rapa var chinensis, is a loose-head Chinese cabbage from Japan. The light green leaves curl at the edges and mature with slim white stems that widen at the base, delicate leaves similar to lettuce in texture. Sweet, mild flavour which is neither hot or bitter.
