Alubia di Tolosa. This small roundish bean is a beautiful deep black with a single white eye. The Tolosa Black Bean does not require soaking and, once cooked, a few drops of extra virgin olive oil and a pinch of salt transform it into a velvety perfumed stew. It has always been cultivated in small fields flanking the Oria river, and the center of production is the Basque city of Tolosa, just south of Bilbao. We brought some of these beans back from Terra Madre in Turin 2008. They have been grown out for us here in Southern Ontario. Try some in their green pod stage too. Heirloom Rare. 17g/approximately30 beans. We have just planted them out so we hope to have them in stock in time for 2024.
