Borago officinalis. Edible, star-shaped blue flowers bloom throughout the summer and are adored by pollinators.. Containing calcium and potassium, the leaves are edible too at a young stage. However, they do let a bit fuzzy as they mature. We have had them deep fried in batter while visiting Italy for a Slow Food conference. They tolerate poor soil and will self seed happily.
