An absolute must in Caribbean cooking! The Scotch Bonnet has a sweet, fruity flavour - but don't let that fool you! It has a SHU rating of 100,000 to 350,000, similar to a habanero. Try using it for jerk seasonings, or make your own pepper sauce!

It starts out pale yellow, and ripens to a mellow, gorgeous orange. Like all hot peppers, it loves full sun and warm temperatures! Like habaneros, they benefit from a really early start in the spring (8-10 weeks before last frost). Tip: we soak our pepper seeds in warm water for several hours before planting, and we use a heat mat to keep the soil evenly warm to aid germination.
