The parsnip is a root vegetable closely related to carrot and parsley. It is a biennial plant usually grown as an annual, it makes it seed in the second year. Its long, tuberous root has cream-coloured skin and flesh.
Becomes even sweeter after a few frosts. One of our favourite root vegetables. It is very special roasted and we make a pear and parsnip soup with them.
