Originally grown as a dye plant by the Hopi Nation The deep red flower bract is used as a dye for food and fabric. Try mixing the ground seeds with yellow corn flower to make a pink cornbread. This variety of amaranth has the deepest red seedlings of all and is prized as a microgreen and can also be used for salads.
