Organic Amaranth Elephant Head

This heirloom was brought to North America from Germany in the 1880's and so named because the huge flower heads often take on the appearance of an elephant's trunk. The tiny seeds are edible popped or ground into flour. The young leaves can also be steamed as an early summer green. 120-150cm (4-5 foot plant); 25-50cm (10-20 inch) flowers. Sow thinly in warm soil. Full sun.
